INGREDIENTS

1 Lebanese cucumber, deseeded and grated
Salt and freshly ground pepper
2 cloves garlic, crushed

¼ cup of mint, finely chopped
Juice of half a lemon
200g natural yoghurt

METHOD

Grate cucumber and season lightly with salt, lightly press into a sieve and drain for five minutes.

Place the garlic, mint, lemon juice and yoghurt into a medium bowl. Stir through the cucumber and season to taste with pepper.
